When life gives you lemons, remember that lemons are important too!
I think lemons are so underrated in the fruit world. They are actually my favourite fruit. I know it sounds weird, but ever since I was a kid I have loved them!
When I was younger, I would steal the slice of lemon from my Mum’s G&T (maybe I was just after her gin!) and when my sister had jam tarts in her lunch box, I’d opt for lemon curd tarts instead.
Even now, I could happily suck on a lemon and eat lemon curd straight from the jar.
But if you’re not a fan of sucking on lemons, then this lemon and almond mug cake is a simple and delicious way of enjoying them.
One thing I learnt when I was creating recipes for my cookbook was that by combining certain flavours, you can make the foods you love taste even more amazing.
So, with lemon, I found that combining it with almonds, olive oil, and dark chocolate makes it taste even better. The lemon and olive oil combo is used a lot in places like Sardinia (an island off the coast of Italy) and Ikaria (a tiny Greek island) too. Both of these countries are Blue Zones – areas of the world home to some of the happiest, healthiest and longest living people on the planet. So they must be doing something right!
Plus, this mug cake is so quick and easy to make (all you need is a mug and a microwave) which makes it a great mid-week pudding when you fancy something sweet and nourishing.
I’ve included my favourite chocolate and lemon sauce in the recipe but it’s also delicious served with Greek yogurt, flaked almonds, and blueberries!
