It seems like 50% of the population love kale and 50% hate it. It’s been hailed as a superfood by wellness ‘gurus’ and hated because, according to a close friend of mine, “it tastes like you’re eating tree bark”.

I’ve always had a pretty neutral attitude towards kale myself until I started sautéing it in a little ghee and then shifted to the kale loving percentage of the population.

This Mediterranean kale dish is another one of my favourite ways to cook up kale – just garlicky enough with a bit of tanginess from the feta, sweetness from the tomatoes, and saltiness from the olives.

This recipe is simple, packed full of nutrients, and takes less than 15 minutes to cook.

It makes the perfect side dish to serve alongside a creamy pasta and it’s a great addition to a Buddha bowl.

  1. Heat a large frying pan or wok to medium and add olive oil. Add garlic and onions and fry for 2-3 minutes.
  2. Add chopped broccoli and fry for another 5-6 minutes before adding the kale, along with 5 tablespoons of water. Fry for another 5-6 minutes or until the kale is tender but still bright green in colour.
  3. Take off the heat and stir through sundried tomatoes, feta and olives.
