  1. Heat oven to 180C and grease and line a loaf pan with baking paper.
  2. Make the batter by mashing the bananas and mixing together with the, vanilla extract, olive oil, milk, maple syrup and brown sugar in a large bowl.
  3. Add the oat flour, all-purpose flour, baking powder, cinnamon, and salt to the bowl and stir until smooth and then stir in the grated carrots.
  4. Empty the batter into the loaf pan and sprinkle the remaining brown sugar on the top.
  5. Sprinkle the brown sugar on top to make the topping slightly crispy and then bake for 35-45 minutes or until the banana bread is risen, golden and knife inserted in the middle comes out clean.
Recipe Notes

*To make oat flour, simply place oats in a food processor and pulse for a few seconds.
*You can easily make this recipe gluten-free by using gluten-free oats and a gluten free flour blend
*You can make this recipe vegan by using a milk alternative such as oat or almond.
