Lemon and Almond Mug Cake
Zesty, moist and perfectly sweet, this lemon and almond mug cake tastes like summer! It only takes a couple of minutes to bake which makes it the perfect mid-week pud!

Instructions
  1. Place all the ingredients for the mug cake in a medium sized mug and mix until smooth.
  2. Microwave on medium-high for 1 ½ - 2 minutes or until risen and spongey. Leave to cool slightly.
  3. To make the sauce, place the chocolate and coconut oil in a small bowl and microwave on medium for 20 seconds, stir and repeat, stirring every 15-20 seconds until you have a smooth, glossy sauce. Once melted stir in the lemon curd until smooth.
  4. Either turn out the mug cake and pour over the sauce, or top with the sauce and eat straight from the mug!

*Coconut and lemon also make a great combo so this recipe also works with coconut oil instead of olive oil
